Chat channels in XMPP protocol are by design always organized into server/guilds/components. It’s up to hosters how they choose to manage this though and there is no discord-like UI except maybe the Prose app

The ability to have apps that meet specific needs is a strength of an open ecosystem, but I agree it can be harder to nagivate if you’re just searching for something as generic as ‘XMPP’ — the Snikket and Cheogram families of apps are working on unified branding for a set of apps that are designed to work together.
